Get ready for a day of creativity, fun, and furry friends! 🐻✨

🌧️☔ Rainy days call for cozy comforts, and what better way to embrace the drizzle than with a warm bowl of Slow Cooker Massaman Curry? 🍲✨

🌶️🥥 Our easy recipe brings together tender chunks of meat or veggies, simmered to perfection in a blend of aromatic spices, creamy coconut milk, and crunchy peanuts. Here's how to whip up this rainy day delight:

Ingredients:

1.5 lbs (680g) of your choice of protein (beef, chicken, tofu, or chickpeas for a veggie option)
1 onion, sliced
2 potatoes, peeled and cubed
1 cup (240ml) coconut milk
2 tbsp massaman curry paste
1 tbsp brown sugar
2 tbsp fish sauce (or soy sauce for a vegetarian alternative)
1 cup (240ml) chicken or vegetable broth
1/4 cup (30g) roasted peanuts
Fresh cilantro for garnish
Cooked rice, for serving

Instructions:

In a slow cooker, combine the protein of your choice, sliced onion, and cubed potatoes.
In a separate bowl, mix together the coconut milk, massaman curry paste, brown sugar, fish sauce, and chicken or vegetable broth. Pour the mixture over the ingredients in the slow cooker.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the meat is tender or the potatoes are cooked through.
Once cooked, stir in the roasted peanuts.
Serve your Slow Cooker Massaman Curry over cooked rice, garnished with fresh coriander.
